- 1 (12 ounce) package extra-firm tofu, cut into cubes
- 4 slices Swiss cheese
- 4 honey-wheat tortillas
- 5 Campari tomatoes, sliced
- 1 cup fresh spinach, or to taste

Step 1
Heat your oven to 400°F (200°C) and lightly grease a baking sheet. In a large bowl, pour enough Buffalo wing sauce over the tofu to coat it well, then gently toss to cover all the pieces. Let the tofu marinate while the oven heats up.

Once ready, spread the tofu cubes out on the baking sheet in a single layer. Brush or spoon a little extra sauce on top and give them a quick spray with cooking spray. Pop the tofu in the oven and bake for about 10 minutes.

After that, carefully flip the tofu pieces over, spray the tops again, and bake for another 10 minutes or until they feel firm and slightly crispy. Meanwhile, lay a slice of Swiss cheese on each tortilla and microwave them just until the cheese starts to melt, around 30 seconds.
Step 4
Now, build your wraps by placing tomato slices on each tortilla, followed by a quarter of the baked tofu and some fresh spinach. Roll them up snugly, and you’re ready to enjoy!
