Cooking Techniques
- Toast the nuts slowly over medium heat to avoid burning.
- Strain the milk through a fine mesh or nut milk bag for a smooth texture.
Step 1
Lightly heat your oven to 350°F (180°C). Line a baking sheet with parchment paper and spread the nuts out in a single layer. Pop them in the oven for about 5 minutes, then give the pan a little shake to flip the nuts. Keep toasting them for another 5 minutes or so, until they’re nicely browned and fragrant. Once done, turn off the oven but leave the nuts inside to cool down a bit for about 10 minutes.
Step 2
Transfer the toasted nuts to a large bowl and cover them with water. Let them soak for half an hour—this softens them up and makes blending easier.
Step 3
After soaking, scoop the nuts out with a slotted spoon, saving the soaking water. Put the nuts in your blender and start by adding 1 cup of the soaking water. Blend on low speed for about 30 seconds. Then add another cup of water and blend for a full minute. Finally, pour in the rest of the soaking water and blend on medium for another 30 seconds. Let the mixture sit for 10 minutes to settle.
Step 4
Strain the nut milk through a fine sieve or nut milk bag into a clean container. Stir in a little honey and a pinch of salt to taste. Cover it up and pop it in the fridge to chill. Enjoy your homemade nut milk within a few days!
