Step 1
Prick the sweet potato all over with a fork and popping it on a microwave-safe plate. Microwave it for about 8 to 10 minutes, or until it’s completely soft. Let it cool just enough so you can handle it.

Step 2
Cut the sweet potato in half and scoop out the flesh into a bowl. While it’s still warm, mash it well. Then, add the egg, goat cheese, black pepper, cayenne, and a pinch of salt. Whisk everything together until smooth. Stir in the flour with a spatula until the dough comes together and there are no dry spots. Wrap the dough in plastic wrap and chill it in the fridge for at least an hour.

Once your dough is ready, melt the butter in a saucepan over medium heat. Toss in the bacon and cook it, stirring occasionally, until it starts to get crispy—about 3 to 5 minutes.

Shape the dough into dumplings, then carefully fry about five at a time in the bacon butter. Cook them until they’re golden and crusty on each side, which should take around 3 minutes per side. Keep going until all the dumplings are cooked.
