Directions
Melt the chocolate in a double boiler over simmering water. Keep stirring it often and scrape down the sides with a spatula so it doesn’t burn. Once it’s smooth and melted, take it off the heat and let it cool a bit. While the chocolate is cooling, whip the cream cheese in a bowl with an electric mixer until it’s nice and creamy. Slowly add the powdered sugar and rum, mixing everything together until it’s smooth. Then, pour in the melted chocolate and beat it all until combined. Scoop out small portions of the mixture and roll them into bite-sized balls. Finally, roll each ball in some chopped nuts to coat them.
