Directions
Gently heat your oven to 435°F (225°C). Place a tortilla on a pizza stone and brush it with a tablespoon of olive oil. Sprinkle some oregano, salt, and pepper over the top. Next, layer on zucchini slices, tomato slices, spinach, olives, and a generous handful of Parmesan cheese. Add a little more oregano, salt, and pepper, then sprinkle on some red pepper flakes for a bit of heat. Drizzle the rest of the olive oil over everything.
