- Crust:
- 1 cup rolled oats
- ½ cup slivered almonds
- ½ cup brown sugar

- 1 (.25 ounce) package unflavored gelatin (such as Knox®)
- ¾ cup orange juice
- 2 tablespoons orange juice
- 1 pint vanilla ice cream
- 2 cups diced fresh peaches
- ¼ teaspoon almond extract

Step 1
Preheat your oven to 325°F (165°C). Spread the oats out on a baking sheet and toast them in the oven for about 5 minutes. Then, add the almonds to the oats and toast everything together for another 5 minutes. Once done, take the pan out and pour the mixture into a bowl.
Step 2
Stir in the brown sugar and melted butter until everything is well combined. Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan. Pop it into the fridge to chill while you make the filling.
Step 3
Pour the orange juice into a saucepan and bring it to a boil. Take it off the heat and slowly whisk in the gelatin until it’s fully dissolved. Then add the ice cream, stirring until it melts and the mixture is smooth.
Step 4
Gently fold in the peaches and a splash of almond extract. Pour this filling into your chilled crust, then let the pie chill in the fridge for at least 3 hours before serving. Enjoy!
