- 4 cups water
- 1 cup quick-cooking grits
- 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) container sour cream
- 1 (16 ounce) package shredded Cheddar cheese

Step 1
Warm your oven to 350°F (175°C) and greasing a 9x13-inch baking dish. Next, bring a pot of water to a boil. Slowly add the grits while stirring constantly to keep them from clumping. Turn the heat down to medium-low and let the grits simmer, stirring often, until they’re thick and tender—this usually takes about 3 to 4 minutes.

Step 2
While the grits are cooking, warm a skillet over medium-high heat and add the grated SPAM®. Cook it, stirring now and then, until it’s nicely browned. Drain off any extra grease once it’s done.

Step 3
Mix half of the browned SPAM® into the cooked grits along with the tomatoes, sour cream, and half of the shredded Cheddar cheese. Spread this mixture evenly in your prepared baking dish. Sprinkle the remaining SPAM® and cheese on top.

Step 4
Pop the casserole into the oven and bake for around 30 minutes, or until it’s heated through and the cheese on top is melted and bubbly. Let it cool a bit before serving, and enjoy!
