Directions
Put the oats, almonds, and cashews in a big bowl and cover them with 2 cups of filtered water. Pop it in the fridge and let everything soak for at least 8 hours, or overnight if you can. When you’re ready, take the bowl out and stir in the flax seeds. Let the mixture sit at room temperature for about an hour so the flax seeds can soak up some water and get a bit gelatinous. Next, pour the whole thing into a blender and blend until it’s smooth and creamy. Let it rest for a few minutes, then add the remaining 2 cups of filtered water. Blend again until everything is well combined and silky. Finally, strain the milk through a fine-mesh sieve to catch the pulp. You can enjoy your fresh plant-based milk right away or keep it in the fridge for up to a week. Just give it a good shake before using!
