Step 1
Preheat your air fryer to 325°F (165°C). Line the basket with parchment paper and give it a quick spray with some nonstick cooking spray to keep things from sticking. In a bowl, mix together the almond flour, Greek yogurt, 2 tablespoons of sweetener, baking powder, cinnamon, vanilla, and a pinch of salt. Use your hands to bring the dough together until it forms a nice ball.

Step 2
Lightly flour your work surface and divide the dough into four equal parts. Roll each piece into a ball, then cut each ball into eight smaller pieces. Dust those pieces with some flour, then roll each one between your hands into a thin rope—the thinner, the better for crispiness! Arrange the ropes in a circular pattern in the air fryer basket to make a funnel cake shape. Repeat with the rest of the dough, and don’t forget to spray the top with cooking spray before cooking.

Step 3
Cook the funnel cakes for about 5 to 6 minutes until they turn golden brown. Flip them over, give them another spray, and cook for another 3 to 4 minutes. Once they’re done, sprinkle the remaining sweetener on top and enjoy!
