Cooking Advice
- Use fresh spices or toast dried ones lightly to bring out their aroma.
- Simmer slowly on low heat to keep the meat tender and allow flavors to meld.
Step 1
Brown the beef in a large pot over medium heat, stirring occasionally until it’s nicely seared, about 5 to 7 minutes. Next, toss in the onions and garlic, cooking everything together until the onions soften up, which should take around 5 to 10 minutes. Mix in the harissa, making sure the beef is well coated, and let it cook for another couple of minutes to bring out those flavors. Season the mixture with salt and pepper to taste.
Step 2
Pour in enough water to cover the beef and bring it all to a gentle boil. Once boiling, add the potatoes and tomatoes, then lower the heat to a simmer. Let it cook slowly for 2 to 3 hours, or until the beef is tender and the potatoes are cooked through. Give it a taste and adjust the seasoning if needed before serving.
