- 4 eggs
- 20 frozen bite-size potato nuggets (such as Tater Tots®)
- Country Gravy Mixture:
- 1 bunch green onions, white parts only, chopped
- 2 tablespoons butter
- 5 links frozen turkey sausage (such as Jimmy Dean®)
- 5 slices cooked bacon, cut into pieces
- 2 ½ cups milk
- 3 teaspoons ground black pepper
- 1 pinch cayenne pepper
- 4 (9 inch) whole wheat flour tortillas
- 8 thin slices Cheddar cheese

Step 1
Heat your oven to 450°F. Spread the potato nuggets out in a single layer on a baking sheet and pop them in the oven. They'll take about 17 to 19 minutes to get nice and golden. While the potatoes are cooking, spray a large skillet with cooking spray and warm it over medium-high heat. Crack the eggs into a bowl and whisk them up, then pour them into the skillet. Stir occasionally until the eggs are fully cooked, which should take around 5 minutes.

Step 2
Take the green onions and butter and toss them into a cold saucepan. Slice the sausage links into small pieces after heating them in the microwave for about a minute, covered with a paper towel. Add the sausage and some bacon to the saucepan with the butter and onions. Cook over medium heat, stirring now and then until the butter melts. Gradually sprinkle in a little flour, stirring to form a paste, then slowly pour in the milk while stirring constantly. Turn the heat down and keep stirring until the gravy thickens, about 5 minutes. Finish it off by mixing in black pepper and a pinch of cayenne.

Step 3
To assemble, lay out a tortilla on a microwave-safe plate and place two slices of Cheddar cheese down the center. Spoon a quarter of the scrambled eggs over the cheese, then add around five potato nuggets. Microwave this for about 20 seconds until everything is warmed through. Pour some of the gravy over the filling and microwave for another 20 to 30 seconds. While it’s still warm, roll up the tortilla tightly around the filling. Repeat this process to make three more burritos with the rest of your ingredients. Enjoy!
