Step 1
Warm your oven to 325°F (165°C). In a big bowl, combine the oats, pecans, and almonds. In a separate measuring cup, whisk together the oil, maple syrup, and water, then pour this over the oat mixture. Give everything a good stir so the oats and nuts are nicely coated. Spread the mixture evenly across two baking sheets.
Step 2
Pop the trays into the oven and bake for 12 minutes. Take them out, give everything a good stir, then bake for another 12 minutes. Stir once more, and bake for about 12 more minutes until the granola turns a lovely golden brown. Let it cool completely.
Step 3
While the granola cools, mix the cinnamon and cardamom in a jar with a lid. Add the dates, raisins, and cranberries, then put the lid on and shake it all up so the fruit gets coated in the spices. Finally, stir the spiced dried fruit into the cooled granola, and you’re ready to enjoy!
