Step 1
Heat a skillet over medium heat and adding a bit of oil. Toss in the onions and cook, stirring occasionally, until they soften and become translucent—this usually takes about 5 minutes. Then turn the heat down to low and keep cooking the onions gently, stirring now and then, until they’re really tender and have turned a deep brown color. This will take around 40 minutes, so be patient and let them caramelize slowly. Once done, take the pan off the heat and let the onions cool.

While the onions are cooling, slice the figs lengthwise into thin rounds, about a quarter-inch thick. When you’re ready to assemble, spread a small dollop of goat cheese on each cracker, add a little of the caramelized onions on top, and finish with one or two fig slices.
