Directions
Move your oven rack so it’s about 4 to 6 inches from the broiler, then go ahead and preheat the broiler. Lightly spray a broiler pan with cooking spray to keep the chicken from sticking. In a small bowl, mix together the butter, lemon juice, Italian seasoning, garlic powder, and a pinch of cayenne pepper until everything is well combined. Place the chicken breasts on the pan and brush half of the butter mixture over them. Pop the pan under the broiler and cook the chicken for about 6 minutes. Then, flip the breasts over, brush on the rest of the butter mixture, and broil for another 6 minutes or so, until the chicken is cooked through and no longer pink in the middle. To be sure, the internal temperature should reach 165°F. Let it rest for a few minutes before serving.
