Directions
Gently heat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with some non-stick spray. Cut the spaghetti squash in half and sprinkle about 2 tablespoons of water into each half. Place the squash cut-side down in a microwave-safe dish and microwave on high for around 10 minutes, or until the squash is tender. Once it’s cool enough to handle, use a fork to scrape out the strands into a mixing bowl. Add the Parmesan, cream, egg, garlic powder, Italian seasoning, salt, and pepper, then mix everything together well. Pour this mixture into your prepared baking dish and sprinkle the shredded Cheddar cheese on top. Pop it in the oven and bake for about 30 minutes, until the top is golden and the filling is set. Let it cool a bit before serving!
