Ingredients
- 3 pounds sweet potatoes, peeled and chopped into 2-inch pieces
- 2 cloves garlic, peeled
- 2 ounces honey-flavored goat cheese
- 1 tablespoon butter
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
Why This Recipe Is So Good
Smart Cooking Tips
- Allow the potatoes to steam fully before mashing to ensure a creamy texture.
- Add goat cheese gradually, tasting as you go to get the perfect balance of creaminess and tang.
Step 1
Pour some water into your Instant Pot. Place the sweet potatoes and whole garlic cloves in a steamer basket and set it inside the pot. Lock the lid in place and make sure the vent is set to sealing. Cook on high pressure for about 10 minutes; it usually takes around 10 to 15 minutes for the pot to come up to pressure.
Step 2
When the timer goes off, carefully release the pressure using the quick-release method (follow your Instant Pot’s instructions for this). Once all the pressure is out, open the lid and take out the trivet, leaving the potatoes and garlic inside.
Step 3
Add the goat cheese, butter, a pinch of salt, and some black pepper to the pot. Mash everything together until it’s creamy and smooth, or just how you like it. Serve it warm and enjoy!
