Step 1
Trim off the top quarter of each tomato. If they’re a bit wobbly, slice a tiny bit off the bottom so they can stand up straight. Use a small spoon—like a baby spoon or grapefruit spoon—to gently scoop out the pulp. Then, place the tomatoes cut-side down on some paper towels to drain while you get the filling ready.
Step 2
In a bowl, mix together the salad dressing, bacon bits, chopped green onions, Parmesan cheese, and parsley. Once everything is combined, spoon the mixture evenly into the hollowed-out tomatoes. Cover them up and pop them in the fridge until you’re ready to serve.
