Step 1
Gently heat your oven to 425°F (220°C) and lining a baking sheet with parchment paper. Lay the asparagus out in a single layer on the sheet, then drizzle with olive oil and sprinkle over some fresh garlic and cracked pepper. Give everything a good toss so the asparagus is nicely coated. Pop it in the oven and roast for about 12 to 15 minutes until tender.

While that’s cooking, move an oven rack to about 6 inches from the broiler and turn the broiler on to preheat. Once the asparagus is done roasting, pull it out and spread some Gouda cheese along the middle of the spears. Slide the pan under the broiler and watch closely as the cheese melts—it should take just 3 to 5 minutes. When it’s all gooey and delicious, take it out and finish with a sprinkle of pink Himalayan salt before serving.
