Step 1
Boil the saltfish in a large pot of water to get rid of some of the salt. Drain the water and repeat this a couple of times until the fish isn’t too salty. Once that’s done, drain the fish well, flake it into small pieces, and squeeze out any excess liquid.

Heat some oil in a large skillet and sauté the onions, tomatoes, and peppers for a couple of minutes until they’re soft and fragrant. Add the flaked saltfish, a splash of lemon juice, and some hot pepper to taste. Keep the heat low and let everything cook together until most of the moisture has evaporated, stirring occasionally.
