Step 1
Lightly heat your oven to 350°F (175°C) and lightly grease a loaf pan with cooking spray. Take the chicken sausage out of its casing and toss it into a large bowl along with the ground chicken. Chop up your green onions, celery, jalapeños, and white onion, then set aside about a quarter cup of each for topping later. Add the rest of the veggies to the meat mixture and give everything a good mix.
Step 2
Stir in most of the blue cheese (about 3/4 cup), bread crumbs, half a cup of Buffalo wing sauce, eggs, onion powder, salt, and pepper until everything is well combined and the veggies are evenly spread throughout. Transfer this mixture into your prepared loaf pan and spread it out evenly.
Step 3
Drizzle the remaining Buffalo wing sauce over the top, then sprinkle on the reserved veggies and the last bit of blue cheese. Pop it into the oven and bake until you see the sides bubbling and pulling away from the pan—this should take around an hour and a half. To be sure it’s fully cooked, check that the center hits 165°F (74°C) with a meat thermometer. Let it rest for a few minutes before slicing and serving.
