Step 1
Lightly heat your oven to 375°F (190°C) and lightly spray an 8-inch pie pan so nothing sticks. In a saucepan, bring the water and brown rice to a boil. Once boiling, lower the heat to medium-low, cover the pot, and let it simmer for about 45 to 50 minutes, or until the rice is tender and all the water has been absorbed.

While the rice cooks, mix together the peanut butter, applesauce, honey, and egg in a bowl until smooth. Once the rice is ready, add it to the peanut butter mixture along with the garbanzo bean flour, oats, currants, coconut, sunflower seeds, chia seeds, baking powder, and cinnamon.
