- 4 skinless, boneless chicken breasts
- 1 cup all-purpose flour
- 3 eggs
- 2 tablespoons water
- 4 cups bread crumbs
- 2 mangos, peeled and coarsely chopped

- 1 cup heavy whipping cream
- 2 tablespoons mango jam
- ¼ cup vegetable oil, or as needed

Step 1
Place the chicken breasts on a flat surface and gently pound them with the smooth side of a meat mallet until they're about a quarter-inch thick. In one shallow bowl, put the flour. In another, whisk together the eggs and a splash of water. Spread the bread crumbs out on a plate.

Step 2
Coat each piece of chicken first in the flour, then dip it into the egg mixture, and finally press it into the bread crumbs, making sure both sides are well covered. Set the breaded chicken aside on a plate.

Blend the mangoes, cream cheese, heavy cream, and mango jam until smooth. Pop the sauce into the fridge to let it thicken up a bit while you cook.

Heat some oil in a large skillet over medium heat. Cook the chicken until it’s golden and cooked through, about 3 minutes on each side.
