Directions
Heat your oven to 375°F (190°C). In a covered saucepan, bring the water and olive oil to a boil, then stir in the salt. Spread the rice evenly in a 9x13-inch baking dish, and pour the hot water mixture over it. Cover the dish tightly with two layers of aluminum foil to keep the steam in. Pop it in the oven and bake for about an hour, or until the water is fully absorbed. When it’s done, take the rice out, remove the foil, and fluff it gently with a fork. Then cover the dish with paper towels and let it sit for about 5 minutes so the steam can finish the job. Finally, uncover and let it cool a bit before serving.
