- ½ (8 ounce) package softened cream cheese, cut into chunks
- ¼ cup softened butter, cut into chunks
- 1 egg, beaten
- 6 slices bacon, or more to taste (Optional)

Step 1
Warm some oil in a large skillet over medium heat. Toss in the red bell pepper, celery, and onion, and cook them until they’re nice and soft, about 5 to 10 minutes. While that’s cooking, go ahead and preheat your oven to 375°F (190°C).

In a big bowl, mix together the stuffing mix, cream cheese, butter, and beaten egg. Pour in the hot water and stir everything until it’s well combined. Let the mixture sit for about 10 minutes so it can absorb the liquid.

Once that’s ready, fold in the cooked veggies. Then, shape the mixture into bite-sized balls, roughly an inch each. Pour some bread crumbs into a shallow dish and roll each ball around until it’s coated.

Place the breaded balls on a baking sheet and gently press them down to form little patties. Wrap each one with a slice of bacon.

Pop them in the oven and bake until the bottoms are golden and crispy, about 10 minutes. Flip them carefully and bake for another 10 minutes or so, until the bacon is crisp all over. Enjoy!
